Modern Wensleydales can be sharp, acidic and crumbly, but Yoredale is an altogether more interesting cheese. Made traditionally with raw milk; it is rounded and smooth, rich and buttery, but balanced with a refreshing acidity. Matured for three to four months, more mineral tones appear towards the clothbound rind as the cheeses develop their full potential.
Yoredale, the ancient name for Wensleydale, reflects the heritage of this hand-made cheese. Made in a micro-dairy in the town of Wensley, it is England’s only raw milk Wensleydale. (The cheese was previously called ‘Old Roan’).
*A whole Yoredale Wensleydale weighs approximately 5kg. Smaller weights are a cut of a whole cheese.
