Our philosophy is very simple. We only use English heritage and ancient wheats. We work in partnership with organic farmers. We pay them fairly and realistically. We mill the grains they grow into flour on our premises. We make all of our own products. We only use other ethically sourced, natural ingredients.
Fettuccini is brilliant with mushroom sauces, and obvs, makes perfect cacio e pepe . Made using modern, ancient and Heritage wheats grown in the UK on specific partners farms. The Pasta needs to be boiled briefly and keeps cooking when warm - treat it gently, just like your gut wants to be.
