A mature Farmhouse Cheddar, with a delicate tangy bite
Bulk Coastal Cheddar Cheese made from a dedicated milk supply taken from local farms and pasteurised to legal limits. Starter culture & rennet (suitable for a vegetarian diet, benzoate free) are added. The curd is cut and milled and salt is
added prior to packing into moulds. Blocks are packed in vacuum bags during maturation (typically up to 12 months). At selection cheese is cut into portions of required size and shape and then cold smoked over oak chips. Cheese is
supplied to customer based on a medium- mature flavour profile as agreed. The manufacturing process follows Good Manufacturing Practice supported by a comprehensive HACCP system. Conforms to legal standard for Cheddar Cheese.
